VIETNAMESE PIG’S STOMACH SALAD RECIPE- goi bao tu heo

Ingredients
1 pig’s maw about 500gram, clean ,boiled, sliced thinly
300gram shrimp,char-grilled or dry-fried,shelled,leaving tail on each shrimp.
1 carrot,peel, cut into thin trips
1 cucumber, quarter lengthwise,remove seed,sliced diagonally.
1 onion sliced thinly
1 bunch of vietnamese coriander, chpped coarsly
1 tablespoon crispy-fried chinese onion
1 tablespoon roasted peanut, chopped coarsly
1 clove garlic chopped finely
1 chilli chopped finely
vietnamese salad dressing
vietnamese mixed fishsauce for dipping
shrimp cracker
Method
In a large bowl,combine cooked pig’s maw,shrimp,onion,carrot,cucumber,coriander and salad dressing. Toss gently for a minute.Transfer to serving dish, top with crispy onion,peanut. Served with shrimp cracker and fishsauce.

* Mixed fish sauce can be used as a salad dressing ( omit or reduce the water) or a dipping sauce.
