Banana Bud and Squid salad recipe – Goi bap chuoi
300gr shredded banana bud( outer layers removed,shredded,soaked in water to which lemon or vinegar added, squezze to drain)
100gr carrot or green papaya, cut into thin strips
100gr dried squid, grilled/steamed and tear in small pieces
50gr cooked chicken or pork cut into strips
1 tablespoon roasted sesame
1 tablespoon roasted peanut, coarsly pound
1 tablespoon crisp fry onion and garlic
1/2 tablespoon chopped chilli and garlic
Vietnamese coriander, finely chopped
Vietnam salad dressing
Vietnam dipping fishsauce
In a mixing bowl, comebine banana bud,carrot, squid, chicken, coriander, chilli then add in salad dressing . Toss well .Transfer to dish.Top with sesame, peanut.
Served with dipping fishsauce and sesame rice-paper.
* Snail, clams, shrimps … may be used in this salad recipe instead of dried squid.
*Mixed fish sauce can be used as a salad dressing ( omit or reduce the water) or a dipping sauce.
